Cut in half, and then use a spoon to scoop up the green inside. And leave the fuzzy skin

Peel the fuzzy skin off with a potato peeler, then slice the insides into thick disks

I do the slicing up of the insides as well. A potato peeler would be nice, but I just use a knife and be careful.
