The reason that sentence was used and not the other is because this sentence is over a 130 years old. I highly doubt they would use the second sentence 130 years ago saying how most people what are considered at witchcraft and against church and all sorts of silly things. The sentence was used mainly for kids in school to learn how to copy their letters. So I doubt parents would have wanted their kids writing that second sentence
