Are they good polls that use simple, random, and representative samples?
Because a poll of a thousand people in the Midwest who answer landline phones at 3pm on a weekday and then cooperate with the poll—that's not actually representative of the United States.

Correct. You can also have targeted surveys as well. Surprisingly, one of the most accurate and transparent surveys out there is Family Feud: they disclose their methods, sample size, and sample population.
