It's tsu. Place your tongue against your teeth where you would if you say "t" then continue the word.

I can honestly say I've never heard anyone pronounce the T in tsunami and apparently I'm the only one?

Yeah, most people just leave it out because it's not overall important to understanding the word but it is there in the Japanese language.

It's 100% "tsu", not "S oo". You've been pronouncing it wrong.
Also, the H in honesty isn't silent either.
