Well they did. They also teach how we cheated the locals out of land because the concept of owning land was foreign to most of them. Also the Trail of Tears and the events that preceded and followed were all covered. There's alot of things wrong with the US education system but this example is not one of them.
The entirety of thanksgivings "story" is fake and is still taught in the classrooms as natives saving a colony on the verge of death and it never happened at all. It's still actively taught that there was a feast to celebrate which also never happened. The ACTUAL feast is theorized to be that of one celebrating the hunting down of over 500 natives. This IS one of those things to be ashamed of. The entire holiday is propaganda. Literally all of it from its conception in the 1900s till now.

We certainly learned about the different tribes (each kid has to do a report on one tribe), trail if tears, etc. My kids also have to do that.

Many alive saw segregation in their lifetimes but you’ll find plenty who will tell you about how racism was an overblown thing that is all but effectively gone- a relic of the past. Trying to convince people slavery was bad and not a big party full of happy slaves and benevolent masters is hard enough. Getting people to feel shame at overtly shameful behavior in light of revisionist history is hard enough, bringing any hint of harsh reality to a feel good holiday overwash seems a reach. People prefer the happy story, the fragility of self identity and ego at having been wrong makes it easier for some adults to believe in the tooth fairy than to admit one got over on them.
