Wel there is the problem. It cannot be completely absent, so it must be present but lacking function. That leaves the question; would this brain have a soul?
I think the ultimate problem would be producing a brain that only has the mechanical functions without the cognitive function. We haven't reached a point in neuroscience (I don't think) where we fully understand the complexities of the brain to produce a simple mechanical brain. Now, if we could genetically create a person who has no brain and keep them alive through a life support system (AI brain), that may be an option. People who are considered "brain dead" are kept alive without the use of a brain, and used for organ donation on the reg.
I think the trial and error would of getting a genetic non functioning brain would also be a little questionable.
I think stem cell 3D organ printing is promising. if we could print an entirely new body, and upload our brain into the new body that could be a way to continue life indefinitely. You could even have a legit sex change, without the surgery, penis enlargement, race change, become a cat.
Nobody could answer whether or not they would have "souls" because "souls" are a concept made up by superstitions... you can't expect them to make any sense

Better to just clone organs on demand. They would have the same MHC profile as the recipient so no need for lifelong drugs & the inevitable organ failure after a transplant. We need to find ways to speed up the cloning process for solid organs.

Your conversation is interesting. I find nothing morally wrong with cloning organs or complete bodies without brains or with incomplete brains ( no cognitive function) for organ harvesting. But there already is eternal life through Jesus Christ and it comes complete with new perfect bodies. Before calling it a myth or whatever you should study the facts a bit more. The new testament of the Bible was written by eye witnesses and people who wrote down accounts of eye witnesses of the life, death, resurrection and ascension of Jesus. There is more evidence that a person by the name Jesus lived at the correct time in history and the correct area. And many other people talked about in The Bible did in fact live at the correct periods based on historical records outside The Bible. And since there were eye witness accounts in the Bible as to Jesus's resurrection it all backs each other up, that The Bible is indeed factual. Eye witness accounts never match in every detail. Cont.

But contemporary Bibles such as the one I use have many scholars translate from the original manuscripts in the original languages with scholars checking the translations repeatedly. And for words or phrases that can mean more than one thing in the original they use context of surrounding passages and other passages of the same subject to get the correct meaning. And in my NIV Life Application study Bible if still in any doubt they include the less likely one in footnote on same page. So review your opinion.
