You're making me want to set up a habit of trying a Mauritian recipe every month (only because it's financially complex to do it more often).
Btw, I'm going to try again the dholl puri sometime next week; do you have advice regarding the dholl puri in itself? The taste was nice (definitely going to buy dal gram again) but instead of a crêpe-like texture I made something that looks like a pita or naan bread. Not enough gram water?

The marination takes 14 hrs for the meat. The cooking process is maybe 2-3hrs.
For the dholl puri, the first time, it's always like this. Did you use turmeric when boiling the dholl? The gram water should be pale yellow and the foam MUST be removed.

Ok, that's reassuring^^ I did follow the recipe to the letter and add turmeric in the water. It was indeed pale yellow. I'm not sure I removed the foam correctly because I don't have a sieve like they had in the video, I used a wooden spatula. To avoid using the starch at the bottom, I transfered the dal water in a bowl, it set quickly so that the starch was at the bottom and I could use the clearest part in the dough.
I tried spreading the dholl on the spatula like they did in the recipe to make sure it was cooked; then got it as powdery as I could in a blender (this was 5min before melting the "bowl" part of the blender, oops). Then I don't have the hand processer they used. I did this part by hand. The little balls looked like they did in the video, but some grains were still visible. For the dough I also followed what they said, and cooked a few as a time to make sure it was still moist.

Ahh no worries, you did whats right. The grain means the dholl was not boiled correctly but you'll get it next time. I see where the problem might be. What did you use to cook em?

Furthermore, I disagree with some contents on this site but I just feel for some people those contents might be fun or I might just be slow. As long as posts are appropriate, noone can tell their peers what to post.
